Recipe for 12 small muffins
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients:
- 1 large egg
- 75g blueberries (or other fruits)
- 80g butter
- 2 or 3 teaspoons baking powder
- 100g sugar (for me, 80g)
- 100g flour
- 2 or 3 tablespoons of milk
- 3 or 4 drops lemon oil
Heat the oven to 180 degrees (180°C, thermostat 6)
In muffin cups, put paper liners and put them on the oven tray.
In a bowl, combine the soft butter with the sugar. After some minutes, when the
mixture is white, add the egg and the milk.
Then, incorporate the flour and baking powder.
Do not over-mix!
Add blueberries and use a spoon to mix the blueberries into the muffin batter gently.
Do not forget some drops of lemon!
Divide batter between muffin cups.
Bake blueberry muffins for about 15 min.
Take out muffins to see if they are cooked.
