Christmas recipes (as used in our Christmas parties) - by Ruth

INGREDIENTS
RECIPE

CHRISTMAS CAKE

DRIED FRUIT
FLOUR
BROWN SUGAR
EGGS
MARZIPAN
ICING
BUTTER

 

Heat the dried fruit, brown sugar and butter in a pan.
Boil the mixture then simmer for 10 minutes.
Remove the pan from the heat and cool to room temperature.
When it is cool, stir in the eggs and flour.
Put the mixture in a cake tin.
Bake at 140 ° C for 2 hours in the oven.
Decorate with marzipan and icing.

MINCE PIES

BUTTER
FLOUR
SUGAR
EGG
MINCEMEAT
ICING SUGAR

 

Make the pastry with the butter, flour, sugar and egg.
Roll out the pastry and cut circles in it.
Put the pastry circles in the tin.
Spread the mincemeat on the pastry circles.
Bake the pies in the oven.
When the pies are cool, sprinkle them with icing sugar.

CHRISTMAS LUNCH

Turkey
Stuffing
Potatoes
Gravy
Brussel sprouts
Carrots
Peas

 

Stuff and prepare the turkey.
Cook the turkey for 3 hours in the oven.
Peel the potatoes and prepare the other vegetables.
Roast the potatoes and carrots in the oven.
Boil or steam the peas and brussel sprouts.
Make the gravy.
Carve the turkey.

VEGETARIAN NUT LOAF

NUTS
MUSHROOMS
CARROTS
ONION
BREADCRUMBS
EGG

 

Chop the nuts.
Fry the onions and mushrooms.
Grate the carrot.
Mix all of the ingredients together.
Put the mixture in a loaf tin.
Bake in the oven for 40 minutes.

SMOKED SALMON STARTER

SMOKED SALMON
BROWN BREAD
BUTTER
LEMON
CHIVES
CRÈME FRAICHE

 

Cut the salmon into small pieces.
Butter the bread.
Cut the lemon.
Place the salmon on the buttered bread.
Squeeze a little lemon juice on top.
Decorate with crème fraiche and chives.

MULLED WINE

RED WINE
SUGAR
CINAMMON STICKS
VANILLA POD
NUTMEG
CLEMENTINES

 

Squeeze the clementines and cut up the peel.
Heat the sugar and the clementine juice.
Add the cinnamon sticks, vanilla pod, nutmeg and clementine peel.
Pour in the red wine.
Simmer. Do not allow it to boil.
Pour into glasses with handles.
