Epiphany Cake Revisited

This year, to change the traditional Epiphany cake, I tried a new recipe

Ingredients for 8 to 10 people:

• 2 rolls of puff pastry
• 4/5 apples
• 4/5 pears
• 50g almond powder
• juice of half a lemon
• raisins
• a vanilla pod, cinnamon, star anise
• sugar, if you have light muscovado, it is ideal for pastry or sprinkled on fruit tarts

First day:

• Cut apples and pears in pieces.
• Put them in a pan with lemon juice, sugar, spices and vanilla
• Cook for about 1O to 15 mn
• Pour into a bowl and put it in a cool place for one night

Second day:

• Filter the fruits and remove vanilla and star anise
• During this time, put first roll of pastry on the oven tray
• Sprinkle almond powder before the fruits, so the puff pastry stay crusty!

Then, the recipe is the same as a traditional Epiphany cake (click - from step 4 onwards)
