Epiphany Cake Revisited

This year, to change the traditional Epiphany cake, I tried a new recipe
Ingredients for 8 to 10 people:
- 2 rolls of puff pastry
- 4/5 apples
- 4/5 pears
- 50g almond powder
- juice of half a lemon
- raisins
- a vanilla pod, cinnamon, star anise
- sugar, if you have light muscovado, it is ideal for pastry or sprinkled on fruit tarts
First day:
- Cut apples and pears in pieces.
- Put them in a pan with lemon juice, sugar, spices and vanilla
- Cook for about 1O to 15 mn
- Pour into a bowl and put it in a cool place for one night
Second day:
- Filter the fruits and remove vanilla and star anise
- During this time, put first roll of pastry on the oven tray
- Sprinkle almond powder before the fruits, so the puff pastry stay crusty!
Then, the recipe is the same as a traditional Epiphany cake (click - from step 4 onwards)
