Lemon Cake Recipe

Wash two lemons and the lime.
Grate their zest, and press them.

Melt the butter in a saucepan.

Heat the oven to 180°C (Thermostat 6).

In a bowl, mix the flour with the baking powder and only 100g of the icing sugar.

Add, whisking, the zest and the lemon- and lime-juice.

Incorporate the 3 eggs and the melted butter.

Butter and flour the cake tin and pour the batter in.

Bake in the oven for about 30 min.

Test if it’s cooked with a knife.

Unmold the cake and let it cool.

In a bowl, mix 150g of icing sugar with the juice of the half lemon and the egg white.

Pour the icing on the cake and strew with the pistachios.

Let it harden before serving.
